Em’s Creamy Red Sauce

 

Ingredients:

  • 1 onion
  • ¼ cup of Sogno Toscano EVOO
  • 1 cup vodka or dry white wine
  • 1 can Pasquales whole peeled tomatoes 
  • ¼-½ cup heavy cream
  • Salt and pepper to taste

 

Instructions:

  1. Heat EVOO in a dutch oven or other large pot. Add diced onions. 
  2. When the onions are soft and translucent add salt and vodka or white wine. Cook until the liquid is reduced by half. 
  3. Use your hands or a wooden spoon to break up tomatoes and add them to the pot. 
  4. Simmer until heated though, the longer you cook it, the better the flavor will be. Alternatively, pop it in the oven at 400 for up to 2 hours. 
  5. Before you’re ready to serve, take it off the heat and add the heavy cream. 
  6. Pro tip: ladle some sauce over your pot of cooked pasta and toss until all the pasta is coated with sauce. Serve with parmesan cheese and enjoy!
