Em’s Creamy Red Sauce

Ingredients:
- 1 onion
- ¼ cup of Sogno Toscano EVOO
- 1 cup vodka or dry white wine
- 1 can Pasquales whole peeled tomatoes
- ¼-½ cup heavy cream
- Salt and pepper to taste
Instructions:
- Heat EVOO in a dutch oven or other large pot. Add diced onions.
- When the onions are soft and translucent add salt and vodka or white wine. Cook until the liquid is reduced by half.
- Use your hands or a wooden spoon to break up tomatoes and add them to the pot.
- Simmer until heated though, the longer you cook it, the better the flavor will be. Alternatively, pop it in the oven at 400 for up to 2 hours.
- Before you’re ready to serve, take it off the heat and add the heavy cream.
- Pro tip: ladle some sauce over your pot of cooked pasta and toss until all the pasta is coated with sauce. Serve with parmesan cheese and enjoy!
