Caputo Semolina Flour is ideal for dusting pizza peels, adding a crisp finish to pizza crusts, or creating hearty, rustic breads like pane pugliese (when we were in Italy, this was Mike’s favorite type of bread!). We have also tried the semolina flour in our sourdough bread and it’s worked wonderfully! Its versatility extends to desserts like semolina cakes, offering a delicate crumb and rich taste.
Traditionally, semolina flour has been used for homemade pasta! We haven’t tried that yet because the La Molisana has been so easy and delicious, but we are planning on trying the homemade pasta with this flour soon!

In the US, we can’t eat bread, pizza or pasta without feeling sluggish, bloated and uncomfortable afterwards. But in Italy, these were the staples of our diet and we felt great! There is something different about Italian wheat, and having Italian wheat flour was essential for the best homemade bread, pizza and more!
We have found this flour handles long fermentation well, so it has become our “go-to” flour for sourdough, but it is also great for pancakes, waffles, birthday cakes, quick breads (think pumpkin and banana) and more!

You might think that most canned tomatoes are created equal, we strongly disagree! We have sampled dozens of varieties of canned tomatoes from Costco, Whole Foods, Natural Grocers etc and in our opinion, these taste superior to them all!
Some of our favorite Italian dishes were the various “sugos” our Italian nonna, Graziella, made for us while we lived in Assisi. These were different tomato-based pasta sauces and were so simple to make, but always incredible because of the 100% Italian tomatoes. When curating our Italian pantry staples, these tomatoes were a must!
We find that whole peeled tomatoes are perfect for crafting robust pasta sauces (think vodka sauce, ragu, or a simple tomato sauce) or immersion blending for a simple pizza sauce. The crushed tomatoes are great for soups, stews, chili, and other tomato-based dishes that aren’t necessarily Italian, because the whole tomatoes are canned with basil and the crushed are just plain!

Chef Pasquale's Italian Tomatoes are meticulously sourced from the sun-drenched fields of Apulia (a region of southern Italy also known as Puglia). Sizing Notes And How We Use It
The case comes with three 145oz cans of crushed tomatoes. I usually use about ¼ to ½ of a can for a single meal in my 5.5-quart pot, depending on what I’m making. Sometimes I’ll cook a bigger batch using most or all of one can at once, then freeze half or save it for another meal later in the week. I’ve tried freezing plain crushed tomatoes on their own, but I don’t love how the texture changes after defrosting, so I prefer cooking them into sauces or soups first. For example, I might use part of a can for pasta sauce one night, then use more of the same can the next night for chili or tomato soup which works really well for us! For reference, we’re cooking for a family of six.

Our family has searched grocery stores and boutique markets high and low and it is incredibly difficult to find “solo grano Italiano” pasta here in America, but this is what we loved in Italy, and it’s what sets the Italian pasta apart! We never feel tired, sluggish, or bloated after having this pasta (and our very gluten-sensitive family members can eat it too!). We absolutely love the taste of this pasta, and appreciate that it is unenriched and the only ingredient is 100% Italian durum wheat semolina!
We also researched the bronze die-cut pasta. Pasta that is not labeled “bronze cut die” is extruded through a Teflon-lined machine (yuck!), so you get the chemical exposure, and the temperature of the dough increases because it’s a much faster way to cut pasta. However, with the low temperatures of the bronze cut die, the pasta has a higher starch content and sauces cling to the pasta much better!

DOP San Marzano tomatoes (Denominazione d’Origine Protetta, or Protected Designation of Origin) are widely regarded as the gold standard for canned tomatoes, especially in Italian cooking. They're often called the "Ferrari" or "Prada" of tomatoes due to their superior quality and reputation among chefs, pizzaiolos, and home cooks. Ciao DOP San Marzano Tomatoes are grown from the historic San Marzano tomato seed, governed and controlled by the Consorzio of San Marzano producers. These delicate tomatoes are numbered on each label, carry the required symbols of DOP, and are perfect for all of your specialty dishes!
What makes authentic San Marzano D.O.P. tomatoes special?
Several key factors set them apart from regular canned tomatoes (even those labeled "San Marzano" without the D.O.P.):
- Strict origin and certification — True San Marzano D.O.P. tomatoes must be grown exclusively in a small, designated area in southern Italy called the Agro Sarnese-Nocerino (between Naples and Salerno, near Mount Vesuvius). This is protected by EU law, similar to Champagne or Parmigiano-Reggiano. Only tomatoes from this region, using the specific traditional variety and methods, can carry the D.O.P. label.
- Unique growing conditions — The volcanic soil from Vesuvius is rich in minerals (like potassium and phosphorus), combined with the Mediterranean climate, intense sun, and sea breezes. This imparts a naturally balanced flavor: sweet and intense tomato taste with low acidity, delicate notes, and no harshness.
