Em’s Semolina Sourdough

Ingredients:
- 400g Caputo semolina
- 300g water
- 160g starter
- 10g salt
Instructions:
- Mix all the dough ingredients.
- Fold the dough 4 times every ~30 mins for the first 2 hours to develop the gluten.
- Let it proof for the next 4-6 hours.
- One hour before baking, preheat oven with cast iron pot at 500 degrees.
- Shape your dough and load it into the baking vessel and decrease temperature to 450.
- Cook for 45 min with the top on!
