Em’s Semolina Sourdough

Ingredients:

  • 400g Caputo semolina
  • 300g water
  • 160g starter 
  • 10g salt


Instructions:

  1. Mix all the dough ingredients.
  2. Fold the dough 4 times every ~30 mins for the first 2 hours to develop the gluten.
  3. Let it proof for the next 4-6 hours.
  4. One hour before baking, preheat oven with cast iron pot at 500 degrees.
  5. Shape your dough and load it into the baking vessel and decrease temperature to 450.
  6. Cook for 45 min with the top on!
