Whole Wheat Penne Alla Vodka

Ingredients:
- La Molisana whole wheat penne
- 1 onion
- ¼ c EVOO
- 3 tbsp butter
- ½ c vodka
- ~150 g tomatoes (I prefer whole peeled)
- Heavy cream
- Parmesan cheese for serving
Instructions:
- In a large pot, add olive oil and butter on low heat. Roughly dice the onion and add it to the melted butter and olive oil. Cook slowly until onion is translucent, this can take 15 to 20 minutes.
- Add vodka and simmer until it is halfway evaporated.
- Using a wooden spoon or your hand, break apart the whole tomatoes into the pot (I prefer to do this by hand), simmer until heated through.
- Add heavy cream 1 tablespoon at a time until you reach your desired creaminess.
- Toss about 1/2 to 1 cup of vodka sauce with cooked penne to coat the penne with sauce, and serve with the rest of the sauce on the side, so each person can choose their desired level of sauciness! Top with grated Parmesan cheese!
