Graziella's Sugo

Ingredients:

  • ⅓ cup extra virgin olive oil
  • 1 onion, diced
  • 4 stalks celery, chopped
  • 2 carrots, chopped
  • 2 lbs ground beef
  • ½ cup white wine
  • 3 (28 oz) cans pureed tomatoes
  • 1 tbsp salt

 

Instructions:

  1. Chop the onion, celery, and carrots. Heat the olive oil in a large pot over medium-high heat.
  2. Once the oil is hot, add the onion, celery, and carrots. Sauté for a few minutes until softened.
  3. Add the ground beef and cook until browned.
  4. Pour in the white wine and let it cook down for a few minutes, stirring occasionally.
  5. Add the pureed tomatoes and salt. Stir to combine.
  6. Fill half of one empty tomato can with water and add it to the sauce.
  7. Bring the sauce to a boil, then reduce the heat to a simmer.
  8. Let it cook for at least 3 hours with the lid slightly ajar, stirring occasionally.
