Graziella's Sugo

Ingredients:
- ⅓ cup extra virgin olive oil
- 1 onion, diced
- 4 stalks celery, chopped
- 2 carrots, chopped
- 2 lbs ground beef
- ½ cup white wine
- 3 (28 oz) cans pureed tomatoes
- 1 tbsp salt
Instructions:
- Chop the onion, celery, and carrots. Heat the olive oil in a large pot over medium-high heat.
- Once the oil is hot, add the onion, celery, and carrots. Sauté for a few minutes until softened.
- Add the ground beef and cook until browned.
- Pour in the white wine and let it cook down for a few minutes, stirring occasionally.
- Add the pureed tomatoes and salt. Stir to combine.
- Fill half of one empty tomato can with water and add it to the sauce.
- Bring the sauce to a boil, then reduce the heat to a simmer.
- Let it cook for at least 3 hours with the lid slightly ajar, stirring occasionally.
