Our family has searched grocery stores and boutique markets high and low and it is incredibly difficult to find “solo grano Italiano” pasta here in America, but this is what we loved in Italy, and it’s what sets the Italian pasta apart! We never feel tired, sluggish, or bloated after having this pasta (and our very gluten-sensitive family members can eat it too!). We absolutely love the taste of this pasta, and appreciate that it is unenriched and the only ingredient is 100% Italian durum wheat semolina!
We also researched the bronze die-cut pasta. Pasta that is not labeled “bronze cut die” is extruded through a Teflon-lined machine (yuck!), so you get the chemical exposure, and the temperature of the dough increases because it’s a much faster way to cut pasta. However, with the low temperatures of the bronze cut die, the pasta has a higher starch content and sauces cling to the pasta much better!

These wide, flat ribbons of unenriched 100% Italian durum wheat semolina pasta are so fun! The rough texture grips hearty sauces perfectly thanks to the bronze die and slow drying process. They are packaged in little “nests” which make them less likely to break! It cooks al dente in 10 minutes!
Sizing Notes And How We Use It
This pasta comes in 1lb bags in a box of 12 bags. Because the pasta is dried, pantry storage is very easy! Typically, our family of 6 goes through between 1-1.5lbs of pasta for a family dinner.
